How viable is running a full fledged Linux with GUI on the C0?

How viable is it to buy a C0 for a full desktop with GUI?
I'm looking for a thin small board to run an OS, and to paste it inside (on the back of) a thin, portable LCD monitor.

If so, what images are available?
And what desktops are supported (SDDM, LXDM?) Something small I hope?

Main use is coding in Python/C++, so it doesn't need to be very powerful.

Edit: I'd also prefer to have one USB port for the C0. Where can I get one cheap?

Lubuntu(LXDE) or Ubuntu-MATE can work on a LCD monitor with C0.
What is the native resolution of your portable LCD monitor?
