Access the eMMC filesystem directly?

Currently I only know how to change what's on the eMMC with MTP, and only some of the filesystem is exposed (I don't know how that works, I assume the developer of the OS image chooses which files to expose). Is there any way I can just somehow mount it like a USB stick, or get a shell on it in some way?

MTP does not require any authentication. Therefore, only specific directories were chosen to be exposed.

A shell can be obtained through the USB UART connector or through SSH via a network adapter (ssh odroid@gou).

The entire filesystem can be mounted easily in linux by using "sftp://odroid@gou" as the location in the file explorer GUI.
