Are there any tutorial how to setup UEFI with ODROID C4/N2 boards ????

No this isn't supported on ARM SBCs.

I think I read somewhere (though I may be wrong) that uboot could load some uefi launcher that could boot grub, but you don't really need 3 bootloaders just to load linux.

yes mainline uboot (and possibly BSD) supports UEFI and can be used to load things like a netboot, other boot media or grub. I tried it in the early days on C2 but never got back to it. I put some details here viewtopic.php?p=187959#p187959

For example raspberry pi use this to boot windows 10
https://github.com/pftf/RPi4
And UEFI should be something that is supported by ARM
